Honey Nut Popcorn – A Crispy, Crunchy, Buttery, Nutty, Wholesome Treat!

Over the last year popcorn has become our favorite snack!

We are pretty happy with the standard butter and nutritional yeast toppings but I miss sweet popcorn sometimes. This fun idea has been milling around in my head for a while. That’s usually how a really good recipe starts for me. I have an idea and I think about it, conceptualizing how I should execute it and how it should taste. It grows and takes on its own life in my head until I have memorized the idea and turned it into a recipe. I think you all will enjoy this one!

I used to love Honey Nut Cheerios when I was a girl but I would never eat them now. So to satisfy the lingering cravings from my childhood I present you with a wholesome, super-fun snack that will shake up your popcorn game!

Making Honey Nut Popcorn

Recipe yields approximately 12 cups of popcorn.

It’s All About the Heat!

In a heavy-bottomed large pot melt the coconut oil over medium-high heat. When the oil is hot add the popcorn and swirl it around several times to coat each kernel. Return the pot to the heat but be mindful to swirl the kernels around every minute or so. When the first kernel pops cover the pot with a tight-fitting lid. Continue to cook and swirl the popcorn until the last kernel has popped.

Turn off the stove and immediately remove the popcorn to a large bowl. Toss the popcorn several times to release the steam.

Return the pot to the stove and add the butter. Do not turn on the heat. The residual heat from the pot will melt the butter quickly. When the butter is melted add the honey and stir it until a nice thick sauce has formed.

Drizzle the popcorn with half the honey-butter sauce and half the salt. Shake and toss the popcorn to coat it. Repeat with the second half of the sauce and salt.

Measure out the peanut powder and sprinkle it over the popcorn in two parts. It will adhere nicely to the honey-butter! Shake and toss the popcorn several times to evenly distribute the toppings. Toss in the roasted peanuts if desired.

Serve immediately or store the popcorn in an airtight container.
