This Maple Pecan Fudge is super simple to make and it tastes divine.
The combination of maple and pecan has to be one of my most favorite fall/holiday…actually anytime flavors. I’ve always loved maple fudge but adding the nutty buttery pecan is a fudge game changer. This wholesome, nourishing, coconut butter fudge is quickly becoming a favorite treat in our house. If you are looking for a delicious way to add more healthy fats into your diet then you’ve found your solution. This coconut butter fudge can be made without any dairy or refined sugar. Below I will share the recipe and how to make it to suit a paleo or keto way of eating.
Pecans are a healthy, very keto friendly nut.
Pecans contain a generous amount vitamins and minerals and they are high in healthy fats and low in carbohydrates. This makes them a great choice for any health conscious person.
This recipe makes 30 small servings:
1 Cup Coconut Butter
1 Cup Pecan Butter or 200g Pecans ground in a food processor
1/2 Cup Organic Butter or Coconut Oil
1 Teaspoon Real Maple Flavor
1/2 Teaspoon Vanilla
1/4 Teaspoon Liquid Stevia or 1/2 Cup Raw Honey Or Maple Syrup
1/4 Teaspoon Salt

275g Total Fat
61g Total Carbohydrate
45g Total Dietary Fiber
29g Total Protein
16g Total Net Carbs or .5g Per Serving!
I use the USDA Food Composition Database to calculate the nutritional information. Your results may vary based on ingredients used.
Soften the coconut butter in a warm water bath or in the oven with the light on. Have the rest of the ingredients at room temperature. In a mixing bowl, or your stand mixer, combine all the ingredients and whip with beaters or a whisk until the mixture is light and fluffy. Stop every minute or so to scrape down the sides of the bowl with a rubber spatula. This recipe should take about 3 minutes to whip up.
Line an 8×8 baking pan with parchment paper and pour the fudge into the pan. Smooth it down in an even layer. Refrigerate the fudge for about one hour or until it’s set up enough to cut. Cut the fudge into 30 equal portions and store them in the refrigerator. This fudge softens at room temp so keep it cool!
